Ginger Sesame Pasta Salad

This ginger sesame pasta salad is one of my most favorite recipes during the warmer months. I love the refreshing nature and crunchy texture of the fresh vegetables. The pasta makes it more filling and adds to the texture as well. The sweet and savory sauce brings it all together. It’s the perfect balance of healthy, colorful, and flavorful. Enjoy this recipe and make it for your next lunch, meal prep, or picnic. I prefer to eat it chilled. Cheers!

Instructions
Prepare the tofu (1 block) by seasoning with oil, salt, and pepper; air fry at 400°F for 20 minutes until crispy
Cook the pasta (1 box) to al dente according to package instructions; strain and set aside to cool to room temperature (drizzle with a bit of oil to prevent sticking)
Add the bell peppers (2) and onion (1) to a large bowl
Add sauce ingredients (except for cornstarch and water) into a small bowl and mix together
Set a small pot on low heat and add the sauce
Bring the sauce to a simmer and slowly add cornstarch (2 tsp) and water (2 tsp) until the sauce thickens
Add the pasta, tofu, and sauce into the bowl of vegetables; mix together well
Garnish with green onion and sesame seeds
Place bowl into the fridge to cool for at least 2 hours or serve right away
