Instructions

  1. Heat a large pot or Dutch oven on medium heat and add 3 tbs olive oil.

  2. Sauté onion (1 medium), celery (4 ribs), and carrot (2 medium) until softened.

  3. Add salt and pepper ( to taste), thyme (½ tsp), rosemary (4 cloves), garlic, optional chili flakes (½ tsp), and sun-dried tomatoes (2 Tbsp); mix well.

  4. Add balsamic vinegar (2 Tbsp), white beans (2 15-oz cans), and bay leaves (2); mix well.

  5. Add vegetable stock (8 cups) and optional bouillon (1 Tbsp).

  6. Bring to a boil and add in pasta shells (2 cups); mix well.

  7. Stir occasionally until pasta is fully cooked. Taste stock and add salt and pepper ( to taste) if needed.

  8. Turn off the heat and mix in spinach (3 cups).

  9. Garnish with olive oil, lemon juice, and parsley. Enjoy!
