Instructions

  1. Heat a large pot or Dutch oven on medium heat and add 3 tbs olive oil.

  2. Sauté onion (1 medium), celery (4 ribs), and carrot (2 medium) until softened.

  3. Add salt and pepper (to taste), thyme (½ tsp), rosemary (4 cloves), garlic, optional chili flakes (½ tsp), and sun-dried tomatoes (2 Tbsp); mix well.

  4. Add balsamic vinegar (2 Tbsp), white beans (2 15 oz cans), and bay leaves (2); mix well.

  5. Add vegetable stock (8 cups) and optional bouillon (1 Tbsp).

  6. Bring to a boil and add in pasta shells (2 cups); mix well.

  7. Stir occasionally until pasta is fully cooked. Taste stock and add salt and pepper (to taste) if needed.

  8. Turn off the heat and mix in spinach (3 cups).

  9. Garnish with olive oil, lemon juice, and parsley. Enjoy!
