These bell peppers are stuffed with an easy tuna salad and can be eaten like a sandwich! They are low carb and high protein, and this recipe is perfect for a healthy lunch or picnic! The ingredients are affordable and the dish is filling. Cheers!

  1. Cut a small square around the stem of the pepper (2 whole) to cleanly remove it without cutting too much of the pepper

  2. Cut the peppers in half, remove the seeds, cut out any white pieces, and set aside

  3. Prepare the celery (2 ribs) and onion (1 medium)

  4. Strain the tuna cans (4 cans) and add into a large bowl

  5. Add the onion, celery, mayonnaise (⅓ cup), mustard (2 Tbsp), salt (½ tsp), pepper (½ tsp), and red chili flakes (¼); mix well

  6. Use a spoon to scoop tuna mixture into each bell pepper half, dividing the tuna equally amongst them all

  7. Enjoy!
